The yakgwa making process is one of precise stages: the dough is mixed gently with sesame oil to create the characteristic flaky, tender texture (overmixing develops gluten and makes the cookie tough — the opposite of what yakgwa requires). It is then pressed into carved moulds that create the distinctive flower and geometric patterns, fried at low temperature until golden, then soaked in honey syrup to absorb sweetness throughout the entire cookie rather than just on its surface.

The result is a confection unlike any Western cookie: deeply flavoured, honey-sweet throughout, with a distinctive flakiness from the sesame oil, and a mild warmth from ginger.
