Udon noodles are defined by two characteristics: thickness and chewiness. The wheat noodle is cut significantly thicker than ramen or somen — typically 4–6mm — and the high-gluten wheat flour and kneading process create the elastic, chewy bite (koshi) that distinguishes good udon. In instant format, achieving that texture requires specific processing — either pre-cooking and freezing, or partial cooking and drying at the right stage to preserve the noodle's ability to restore the correct texture in boiling water.
